Tofu

“We get our protein where your protein gets its protein.”
 
For thousands of years humans have relied on vegans to do the hard work and heavy lifting. Elephants, camels, oxen, horses, llamas, and sheep. All vegan. 
 
No one would ever accuse a buffalo or moose of being weak. And amazingly, it is precisely these animals that provide us with the manure we use to fertilize our garden. No one would consider using the excrement of carnivores to grow food as they often contain harmful bacteria and parasites. 
 
If that’s not enough information to get you to look at tofu, consider this. While heart disease is a major cause of death in our society (and contributes a big part of our medical expenditures) the same can’t be said of protein deficiency. Finally, eating tofu never contributes to the inhumane treatment and slaughter of captive animals that often endure unconscionable suffering.
 
So, since Soybeans are a fantastic source of protein in any vegan diet, we’ve come up with a simple recipe that makes eating tofu, fun and delicious. Here goes…
 
Take 1 block of extra firm tofu, preferably organic and local, (we prefer Green Cuisine) and cut it up into 1/2″ cubes
 
In a large bowl, mix some soy sauce, some canola or sunflower oil, some turmeric, lots of nutritional yeast and a little paprika. Add a bit of corn starch if you would like your tofu to be crispy. Experiment with quantities until you find a combination that suits your pallet. 
 
Toss the tofu cubes in the mixture until they are well covered. If the mixture is too runny to stick, add more nutritional yeast and/or corn starch.
 
Bake in the oven at 350°F for about 30 minutes.
