So we love our cup of coffee in the morning. We brew it fresh the old fashioned way with a Melita filter. We savor it with fresh raisin toast (click here for the Raisin Bread recipe) topped with cinnamon, plum spread and/or peanut butter while cozied up in our book nook, planning our day.
But coffee isn’t coffee for us unless it has cream. And we are vegan. So what to do?
Well, once again, after much experimenting and trying numerous recipes we came up with a simple answer.
Cream is milk with a lot of butterfat right? So we tried taking unsweetened silk, our favourite soy milk, and blending it with about 15% canola or sunflower oil by volume. The blender makes it frothy and the unsweetened silk soymilk has just the right amount of flavour to make it work.
