The trick with home fries is to be patient.
Cut medium thoroughly washed potato into about 12 pieces
place in saucepan with cold water, bring to a boil and turn the heat down to simmer for 5 minutes
Fry on medium low heat, don’t crowd them, use two pans if you have to
Take your time – don’t burn them
If you like you can carefully turn each piece to brown it on all sides
Or you can just toss them every few minutes and take your chances
