We started with frozen peas from the store but once we grew our own snow-peas successfully we simply froze the surplus and us that now. This is a wonderful, fresh, and scrumptious variation on traditional hummus. And the canned chick peas provide us with the aquafaba we need to make our Nice Dream in the summer. Stay tuned for that recipe.
Here we go:
In a food processor puree 1 cup frozen sweet peas until they reach a paste like consistency. Add half of one 28 oz can of strained chickpeas, making sue to save the aquafaba for home made ice cream we like to call Nice Dream (we use up the other half in our farm salad).
Now add 1 tbs lemon juice, 3 tbsp olive oil, 3 tbsp horseradish, 1 tbsp of minced garlic (optional), salt and pepper to taste. We like to also add a little cayenne pepper to heat it up. Blend it all until smooth, scraping down the edges as needed. Taste and add what you think it lacks. Remember that playing with your food is half the fun.
