Rye Crackers

Laura’s Love Rye Crackers have a special past.When we first started making them they were so successful that we almost went commercial with them. Until we realized that with success would come the commitment to start another business – bank loans and all. So after designing promotional material and packaging, we backed off.

Still they are delicious, nutritious and ready for anything. And remain a staple in our diet. So here is the recipe for all to enjoy.

Combine 1 cup organic white flour, 2/3 cup of rye flour, 1/3 cup whole wheat pastry flour (or the multigrain mix we use in the bread dough), 3 tbsp organic ground flax seed, 1/2 tsp baking soda and 1 tsp salt. 

Mix in 1/2 cup water, 1/4 cup sunflower oil, and 2 tbsp organic apple cider vinegar. After mix becomes stiff, knead together until it forms a nice moist, oily ball. We split it in two to accommodate two small cookie sheets which happen to fit into our oven.

Roll the dough out evenly onto a cookie sheet and gently slice it into squares. A little practice here makes perfect. Bake at 375°F for approximately 15 minutes. We like to turn the sheet in the oven every 5 minutes as our oven does not heat evenly and the thin crackers can became burnt if left in the same place for the duration.
